The red in this all time favourite curry derives from the colour of the dish which come from, you guessed it right, again, red chillies! The fieryness of the red chillies is offset by the use of creamy coconut milk with more invigorating ingredients: fish sauce, shrimp paste, lemongrass, aubergines, kaffir lime leaves, cumin and coriander and you've got yourself another perfect curry.
